Easter is almost here and that means it's time to color the Easter eggs! What do you do with all of those hard-boiled delights? Make deviled eggs! This recipe makes 12, but they are rather addictive, so if I were you I would double the recipe and make more.
Here are the ingredients:
6 hard-boiled eggs
1 tablespoon mayonnaise
1 teaspoon yellow mustard
One small splash of pickle juice
1 tsp. salt
1/8 tsp. black pepper
Here is how to make them:
Place the eggs in a pan and cover with water. Bring to a boil and shut off the heat, allowing the eggs to sit for 15 to 20 minutes. This method makes the PERFECT hard-boiled egg. Peel the eggs, cut in half, length-wise, and scoop the yolks into a bowl. Add the mayo, mustard, pickle juice, salt and pepper and mash until smooth and creamy. Put the yolk mixture into a plastic baggie and snip off a corner (which acts like a piping bag). Carefully pipe the yolk mixture into the egg halves. Garnish with the chopped chives.
There are many ways to make these eggs; for example, include crumbled bacon in the yolk mixture (SO GOOD), or chop a pickled jalapeno into the mixture. As always, get creative and make the deviled eggs whatever you want them to be. ENJOY!
