94.7 CSX Rockin' Recipes - Kicked-up Spicy Tortilla Soup

This tortilla soup is easy to make and so delicious! I like a little kick in my food, and this is one of those go-to spicy soups. If you can't handle the spice, that's ok! Just leave it out! While I was in the kitchen, I cranked up some soulful Santana, and it was the perfect fit!

Here are the ingredients:

1/2 cup diced bell pepper
1/2 cup diced onion
1 tablespoon olive oil
1 teaspoon chili powder
4 minced garlic cloves
2 cans black beans
2 cans diced tomato (with juice)
1 container chicken broth
fresh lime juice
1 cup frozen corn kernels
1/2 cup chopped jalapeno
1/2 teaspoon chile flakes

Here is how I made the soup:

Saute' onion, garlic and bell pepperand jalapeno until soft. Add the beans, corn, broth, tomatoes. Add the chili powder and red pepper flakes, salt and pepper to taste. Allow to simmer for about 15 minutes. Then add crushed tortilla chips and allow to soften. The soup is now done! Garnish with lime, cilantro, more chips and sour cream.
